Masala Pav || Mumbai Street Food || Masala Pav Sandwich – Recipe No. 51

Masala Pav is a spicy Mumbai street food in which pav is stuffed with spicy onion – tomato – capsicum filling. It is one of the famous street foods of Mumbai. There two masala pav are served in a plate and it is well enough to calm our appetite. It can be served as a snack or it can also be taken in a main course (I mostly take it in dinner). Step – by – Step Procedure Video of Masala Pav

Prep Time – 15 Mins              Cook Time – 30 Mins            Total Time – 45 Mins              Serving – 10 Masala Pav

Ingredients –

  1. Finely Chopped Tomatoes – 2 Cups
  2. Finely Chopped Onions – 4 Cups
  3. Finely Chopped Capsicum – 2 Cups
  4. Butter – 5 Tbsp.
  5. Asafoetida – ½ Tsp.
  6. Red Chilli Garlic Paste – 6 Tbsp.
  7. Cumin Seeds – 1 Tbsp.
  8. Salt to Taste
  9. Red Chilli Powder – 1 ½ Tbsp.
  10. Turmeric Powder – 1 Tsp.
  11. Coriander Powder – 1 Tbsp.
  12. Pav Bhaji Masala – 1 Tbsp.
  13. Lemon Juice – 1 ½ Tbsp.
  14. Pav – 10
  15. Butter for toasting pav

Method –

  1. Heat butter in a pan and add asafoetida and cumin seeds.
  2. On crackling of seeds, add red chilli garlic paste and cook it for 2-3 mins.
  3. Now add finely chopped onions and cook them for 5 mins.
  4. Add finely chopped capsicum and cook them for another 5 mins.
  5. Now add finely chopped tomatoes and cook all vegetables for 5 mins. more.
  6. Now add red chilli powder, salt, turmeric powder, coriander powder and pav bhaji masala.
  7. Mix all spices properly and add little water and cook them for 5 mins.
  8. Now with the help of potato masher, mash the masala and add lemon juice.
  9. Now apply butter on a flat tawa and add portion of prepared masala and sauté it for few seconds.
  10. Slit 1 pav vertically and toast it from both side and place it on the masala.
  11. Spread the masala over the pav till it covers all sides of pav.
  12. Serve masala pav with lemon wedges.

Vada Pav || Maharashtrian Style Vada Pav – Recipe No. 49

This is my 50th post. I am so happy. I want to thanks everyone who followed me and viewed my post.

My today’s recipe is Vada Pav. Vada Pav is a popular street food in Mumbai and some other parts of India also. It is very easy to make and very delicious and tasty. It consists of deep fried vada made from potato sandwiched between pav. You can have it during any time of the day. It is served with fried green chillies or mint and coriander chutney or tomato ketchup.

Duration – 30 Mins Serving – 15

Ingredients –

For Batter

  1. Gram Flour or Besan – 3 Cups or as required to make 15 vadas
  2. Salt – 1 Tbsp.
  3. Water – 1 ½ Cups or as required to make smooth batter

For Masala

  1. Boiled and Mashed Potato (Aloo) – 4 Cups
  2. Green Chilli and Garlic Paste (grind coarsely green chilli and garlic) – 3 Tbsp.
  3. Oil – 6 Tbsp.
  4. Asafoetida – Pinch
  5. Mustard Seeds – 1 Tsp.
  6. Cumin Seeds – 1 Tsp.
  7. Fennel Seeds – 1 Tsp.
  8. Curry Leaves – 12
  9. Red Chilli Powder – 1 Tbsp.
  10. Turmeric Powder – ½ Tsp.
  11. Coriander Powder – 2 Tsp.
  12. Salt to Taste

Others

  1. Oil for Deep Frying
  2. Pav – 15
  3. Dry Garlic Chutney
  4. Fried Green Chillies

Method –

  1. Take gram flour in a mixing bowl and add in salt.
  2. Prepare smooth batter with the help of water.
  3. Heat oil in a wok and add asafoetida, mustard seeds, cumin seeds and fennel seeds.
  4. On crackling of seeds, add in curry leaves.
  5. Add in green chilli and garlic paste and cook it for 2-3 mins.
  6. Add in mashed potatoes, red chilli powder, turmeric powder, coriander powder and salt.
  7. Mix all ingredients and cook them for 5-10 mins.
  8. Allow masala to cool down completely.
  9. Divide masala into small 15 balls.
  10. Dip each ball into gram flour batter and deep fry them.
  11. Now take Pav and slit it horizontally into two equal halves and keep one side connected.
  12. Spread 1 tbsp. of dry garlic chutney.
  13. Place prepared vada on garlic chutney
  14. Vada Pav is ready to be served with fried green chillies or tomato ketchup or mint and coriander chutney or dry garlic chutney.

Chutneys (Indian Dip)

Dry Garlic Chutney | Vada Pav Chutney – Recipe No. 48

Duration – 20-25 Mins                  Serving – 2 Cups

Ingredients –

  1. Garlic Cloves – ½ Cup
  2. Desiccated Coconut – 1 Cup
  3. Peanut – ½ Cup
  4. Red Chilli Powder – 2 Tbsp.
  5. Salt to Taste
  6. Oil – 3 Tbsp

Method

  1. Heat oil in a pan and roast garlic cloves for 5 mins.
  2. In the same pan roast peanuts for another 5 mins.
  3. Now roast desiccated coconut in the same pan for 5 mins such that it changes it color to light brown. (Just take care coconut doesn’t burn)
  4. Now allow roasted garlic, peanuts and desiccated coconut to cool down completely.
  5. Take a grinder jar and add in all roasted ingredients, red chilli powder and salt and grind them all coarsely.
  6. Dry garlic chutney is ready. It can be served with any dish as it will enhance the flavor of any food. It can be used as a spread for making sandwiches, rolls etc. It is a must ingredient in Maharashtrian Style Vada Pav.

Tip – Instead of using red chilli powder you can also use 4-5 dry red chillies (whole). Just roast them in oil for 2-3 mins. and grind them with other ingredients. It will give nice taste and texture to chutney.

Aloo Bread Vada||Aloo Bread Pakora – Recipe No. 46

Aloo bread vada is a snack item in which bread is stuffed with mashed potato mixture, dipped in gram flour batter and deep fried. It is crispy and crunchy. It is very easy and delicious recipe. Aloo Bread Vada is my favorite snack item which I can have anytime during the day. It is most popular street food in Udaipur (place where I live). People enjoy this near Fatehsagar Lake (Beautiful lake in Udaipur. Must visit place of Udaipur)

Prep Time – 30 Mins       Cook Time – 20 Mins       Total Time – 50 Mins      Serving -10-12

Ingredients –

For Batter

  1. Gram Flour or Besan – 2 Cups
  2. Salt – 1 Tsp.
  3. Turmeric Powder – ½ Tsp.
  4. Red Chilli Powder – 1 ½ Tbsp.
  5. Carom Seeds or Ajwain – 1 Tsp.
  6. Cumin Powder – 1 Tsp.
  7. Water – 1 ¼ Cup or as required for smooth paste

For Aloo (Potato) Masala

  1. Mashed Potatoes – 3 Cups
  2. Oil – 6 Tbsp.
  3. Crushed Garlic – ¾ Tbsp.
  4. Asafoetida or Hing – Pinch
  5. Mustard Seeds – ½ Tsp.
  6. Cumin Seeds – ½ Tsp.
  7. Fennel Seeds – ½ Tsp.
  8. Red Chilli Powder – 2 Tbsp.
  9. Turmeric Powder – 1 Tsp.
  10. Coriander Powder – 1 Tbsp.
  11. Salt to Taste
  12. Water – 2 – 3 Tbsp.

Other

  1. Oil for deep frying
  2. Bread Slices

Method –

  1. Take gram flour in a mixing bowl and add in salt, red chilli powder, turmeric powder, carom seeds and cumin powder.
  2. Prepare a smooth paste with the help of water.
  3. Heat oil in a wok and add in asafoetida, mustard seeds, cumin seeds and fennel seeds.
  4. On crackling of seeds, add in crushed garlic and sauté it for 2 mins.
  5. Add in mashed potatoes, red chilli powder, turmeric powder, coriander powder and salt to taste and mix them very well and cook for 8-10 mins.
  6. Add in 2 tbsp. of water in mixture so that it will be easy to spread on bread.
  7. Now allow potato mixture to cool.
  8. Cut bread into triangular shape.
  9. Spread potato mixture in between two triangular bread slices
  10. Dip it in gram flour batter and deep fry it.
  11. Serve Aloo Bread Vada with fried green chillies and tomato ketchup.

CHATPATA ALOO CHAAT – Recipe No. 31

Aloo Chaat is a Savory Potato Snack. It is very famous Street Food item in North India made from fried potato mixed with different chutneys and spices. It can be eaten as an evening snack or as a starter. It is very easy and simple recipe to make.Whenever you have extra boiled potatoes in your fridge then it can be used to make aloo chaat. Mint & Coriander and Red Chilli Chutney can be easily found in every house and because of that it becomes very handy to make aloo chaat.

Prep Time – 15 Mins Cook Time – 10 Mins Total time – 25 Mins Servings – 2

Ingredients

  1. Potato – 6
  2. Mint & Coriander Chutney (Click here for recipe MINT & CORIANDER CHUTNEY) – 2 Tbsp.
  3. Red Chilli Chutney (Click here for recipe RED CHILLI CHUTNEY) – 2 Tbsp.
  4. Lemon Juice – 1 Tbsp.
  5. Chaat Masala – According to Taste
  6. Oil for Frying

Method –

  1. Cut potatoes in half and par boil them. It will take around 10 mins.
  2. Peel skin of boiled potato and cut them into small pieces or cubes.
  3. Heat oil in a wok and deep fry cubed potatoes.
  4. Take a mixing bowl and add in fried potatoes, mint & coriander chutney, red chilli chutney, lemon juice and chaat masala and mix well.
  5. Aloo Chaat is ready to be served
