Veg Mayonnaise Sandwich is one of the healthy options among all veg sandwich recipe. It is very easy recipe that can be prepared in very few minutes with very few ingredients. It can be a perfect healthy breakfast recipe. These sandwiches can also be served with evening tea or can be packed in kid’s lunch box. These sandwiches are prepared without toasting bread but if you want you can toast the bread (For that first toast the bread and then spread the mixture). I have used basic eggless mayonnaise but if you want you can use any type of flavored mayonnaise also.

Serving – 8 Sandwich

Ingredients –

  1. Finely Chopped Cabbage – 1 Cup
  2. Grated Carrot – 1 Cup
  3. Sweet Corn Kernels – ½ Cup
  4. Veg Mayonnaise – 1 Cup
  5. Lemon Juice – 1 Tsp.
  6. Salt to Taste
  7. Black Pepper Powder – 1 Tsp.
  8. Bread Slices – 16 Slices

Instructions –

  • Take veg mayonnaise in a big bowl and add all ingredients (except bread slices) in it and mix well and prepare a mayonnaise mixture.

  • Cut edges of the bread and take two bread slices at a time.
  • Spread mayonnaise mixture on one slice and cover it with another slice.
  • Cut sandwich diagonally into two parts.

Notes –

  1. Vegetables like onion, green, yellow or red bell pepper can also be added. One can add vegetable as per choice.
  2. I have used white bread but brown or multi grain bread can also be used.

The recipe of rolls is very simple and tasty. These rolls can be served with evening tea or it can be a perfect party snack item. These rolls can be prepared with homemade spring roll sheets or with ready-made sheets. You can add vegetables as per your choice. Spring rolls can be served with tomato ketchup, red chilli garlic chutney or schezwan sauce.

Serving – 10-12 Spring Rolls

Ingredients –

  1. Shredded Cabbage – ½ Cup
  2. Thinly Sliced Onions – ½ Cup
  3. Capsicum Juliennes – ½ Cup
  4. Boiled Noodles – 2 Cups
  5. Chopped Garlic – 1 Tbsp.
  6. Green Chilli Sauce – 3 Tsp.
  7. Soya Sauce – 1 Tsp.
  8. Tomato Ketchup – 4 Tsp.
  9. Vinegar – 1 Tsp.
  10. Salt to Taste
  11. Oil – 4 Tbsp.+ for Shallow Frying
  12. Cornflour Paste
  13. Spring Roll Sheets

Instructions –

  • Heat oil in a pan and add in chopped garlic and sauté it for 2 minutes.
  • Now add in onions, capsicum and cabbage.
  • Add in salt and cook all the vegetables until they become soft.

  • Add in green chilli sauce, soya sauce, vinegar and tomato ketchup and mix all vegetables with the sauces properly.
  • Now add in boiled noodles and toss them with cooked vegetables.
  • Switch off the flame and allow noodles to cool down.

  • Take one spring roll sheet at a time and place one tbsp. of prepared noodles on one side.
  • Roll it and close the edges and roll it again and seal it by applying cornflour paste.

  • Heat oil in a pan and shallow fry spring rolls from both sides till they are crisp and golden.

Pasta in Red Sauce | Recipe No. 104

My today’s recipe is Pasta in Red Sauce.

Pasta in red sauce is a pasta recipe prepared using tomato puree. It is very healthy recipe for kids as lots of vegetables are used to prepare it. It is very easy and delicious recipe. The red sauce is made using fresh tomatoes which are ripe, red and less tangy, vegetables of your choice and herbs. In herbs I have used oregano. If you have basil leaves or Italian seasoning then you can use them.

Serving – Will serve 6 people

Ingredients –

  1. Penne Pasta – 100 Gms.
  2. Fusilli Pasta – 100 Gms.
  3. Finely Chopped Onions – 1 Cup
  4. Finely Chopped Capsicum – 1 Cup
  5. Tomatoes – 750 Gms.
  6. Crushed Garlic – 1 Tbsp.
  7. Salt to Taste + 1 Tsp.
  8. Black Pepper Powder – 1-2 Tbsp.
  9. Oregano – 2 Tsp.
  10. Red chilli Flakes – 1 Tbsp.
  11. Tomato Ketchup – ½ -1 Cup
  12. Oil – 2 Tbsp. + 5 Tbsp.
  13. Water for boiling pasta

Instructions –

  • Boil water in a pan and add in 2 tbsp. oil and 1 tsp. salt.
  • Add in penne and fusilli pasta and allow them to cook.

  • When pasta is cooked, strain water from it and wash cooked pasta from cold water and keep it aside.
  • Boil water in another pan and add in tomatoes and allow them to blanch.
  • When skin starts to leave the tomatoes, switch off the flame and remove tomatoes from water.
  • Allow tomatoes to cool down completely and then remove the skin and blend them to a fine puree.

  • Heat oil in a pan and add in crushed garlic and sauté it for 2 minutes.
  • Add in finely chopped onions and capsicum and sauté them for 10 minutes.
  • Now add in tomato puree, salt, black pepper powder, oregano and red chilli flakes and mix all ingredients well and allow the sauce to cook till the oil starts to leave the sides of pan.

  • Now add in boiled pasta and mix everything very well so that the red sauce coats the pasta very well.
  • Garnish the pasta with some grated cheese and serve.

Notes –

  1. You can use any type of pasta like spaghetti paste, farfalle pasta or shell pasta.
  2. You can add veggies as per your choice or even you can skip it.
  3. Use tomatoes which are ripe, red and less tangy.
  4. You can adjust spices according to your taste.

My Today’s recipe is POTATO PANCAKES

Potato Pancake is a pancake recipe made of grated potato or mashed potatoes. These pancakes are often seasoned with onion, cheese, spices and garlic. This is the best way to use up leftover mashed potatoes. The recipe is very simple yet very tasty. The best way to enjoy these pancakes is when they are fresh and crispy.

Serving – Will make 12-15 Pancakes

Ingredients –

  1. Potatoes – 750 Gms.
  2. Thinly Sliced Onions – 2 Cups
  3. All Purpose Flour – 1 Cup
  4. Black Pepper Powder – 2 Tbsp.
  5. Salt to Taste
  6. Oregano – 1 Tsp.
  7. Oil

Instructions –

  • Grate potatoes with the help of a grater or a food processor and squeeze excess water with the help of hands.

 

  • Now add all – purpose flour, thinly sliced onions, black pepper powder, salt and oregano in grated potato and mix.

  • Apply oil on flat tawa and place ¼ cup of mixture on it and press it with spatula to make ½ inch thick pancake.
  • When bottom of pancake turns golden brown, turn it upside down.
  • When both the sides of pancake turn golden brown remove it from the tawa.

  • Potato Pancakes re ready. Serve it with tomato ketchup or mint and coriander chutney.

Mango and Melon are most popular summer fruits which are liked by many people. There are many health benefits of these summer fruits.

So considering the health benefits of these fruits I have decided to make smoothie by combining both fruits. It is very easy recipe and tasty also. It is a refreshing summertime smoothie recipe.

Serving – 4 Medium Sized Glasses

Ingredients –

  1. Musk Melon – 500 Gms.
  2. Mangoes – 750 Gms.
  3. Strawberry Crush – 3 Tbsp.
  4. Milk – ½ Cup
  5. Sugar to Taste

Instructions –

  • Cut melon and mango into small cubes and place them in a freezer for three hours.
  • After three hours place melon and mango cubes in a blender and blend till smooth.

  • Now add in strawberry crush, milk and sugar and blend it again.

  • Pour it into individual glasses and serve chilled.

Notes –

  1. Consistency of the smoothie should neither be too thick nor too thin.
  2. If you don’t want to add artificial sweetness to smoothie, you can avoid sugar.
  3. Instead of sugar you can add honey also.

I am very happy to post this recipe as it is my 100th recipe.

Paneer Masala Puri is very tasty and delicious puri recipe stuffed with paneer (cottage cheese) masala which consist of grated paneer and spices. It can be a perfect healthy breakfast recipe.

Servings – Will serve 4 people

Ingredients –

  1. Paneer (Cottage Cheese) – 250 Gms.
  2. Roasted Cumin Powder – ½ Tbsp.
  3. Finely Chopped Green Chillies – 2 Nos.
  4. Garam Masala – ½ Tbsp.
  5. Red Chilli Powder – 1 Tbsp.
  6. Salt to Taste
  7. Wheat Flour – 3 Cups
  8. Ajwain (Carom Seeds) – 1 Tsp.
  9. Water – ¾ Cup or as required to knead a tight dough
  10. Oil – 2 Tbsp. + For Deep Frying

Instructions –

  • For puri dough just combine wheat flour, salt and carom seeds.
  • With the help of water knead tight dough and keep it aside to rest for 15 minutes.

  • Take grated paneer in a mixing bowl and add in roasted cumin powder, chopped green chillies, garam masala, red chilli powder and salt and mix.

  • Divide puri dough into small balls.
  • Take one ball at a time and roll it with the help of rolling pin.
  • Place paneer mixture at center of the puri and cover it with the sides and roll it again.

  • Prepare all puris like this and deep fry them until they become crispy.

  • Serve Paneer Masala Puri with tomato ketchup and green chutney.

Potato Wedges is a potato based recipe which is served as a snack or as a starter. Wedges are curvy in shape which is altogether different from potato fries. I have served it with Mint Mayonnaise which is simple combination of mayonnaise and mint and coriander paste. I have deep fried the wedges but it can be baked also. It is a perfect party snack recipe. You can serve it with other meals also like burgers and sandwiches.

Ingredients –

Potato Wedges

  1. Medium Sized Potatoes – 8
  2. Cornflour – 5 Tbsp.
  3. Red Chilli Powder – 3 Tsp.
  4. Salt to Taste
  5. Water – 1 Tbsp. + For Boiling
  6. Oil for Frying
  7. Chaat Masala

Mint Mayonnaise

  1. Mayonnaise – 6 Tbsp.
  2. Mint Leaves – ½ Cup
  3. Coriander Leaves – ½ Cup
  4. Green Chilli – 1

Instructions

Potato Wedges

  1. Peel skin of potatoes and cut them into halves.
  2. Take one half at a time and cut it into three pieces or wedges.
  3. Cut all potatoes into wedges like this only.
  4. Boil water in a pan and par boil all wedges.
  5. Transfer par boiled wedges in to a bowl and add in cornflour
  6. Add in red chilli powder and salt and 1 tbsp. of water and mix.
  7. Heat oil in a wok and drop wedges in it in small batches and deep fry them.
  8. Transfer fried wedges in a bowl and sprinkle chaat masala and mix.

Mint Mayonnaise

  1. Take a grinder jar and add in mint leaves, coriander leaves and green chilli
  2. Add little water and grind all ingredients to a fine paste.
  3. Take mayonnaise in a small bowl and add in green paste and mix.
  4. Serve Potato Wedges with Mint Mayonnaise.
